So, this lchf (low carb high fat) pizza crust isn’t chewy or crispy – it’s more dense and a little fluffy (does that even make sense?), but it holds together well, stands up to toppings, and doesn’t contain almonds (to which I’m allergic!), like many keto crust almonds. It’s also way less labor intensive, and fewer net carbs than a cauliflower crust (for a similar serving size)! Yay!
I’m actually really excited about this recipe for a few reasons:
These aren’t your typical, sweet shortbread – these little guys pack a savoury punch! They’re easy to make and require pretty minimal prep work to get in the oven. Because of the coconut butter and the tomatoes, they are slightly sweet, but the saltiness and pepper really balance that sweetness well! Plus, these shortbread biscuits are low carb, sugar free, grain free, gluten free, nut free, paleo and vegan (seriously!). Continue reading Low Carb Sundried Tomato Shortbread
After realizing just how delicious my last attempt at a low carb homemade Quest bar turned out, I decided to try making another one of my favorite flavors: Strawberry Cheesecake.
This one is again, 2g net carbs per serving, and contains no almonds which I’m allergic to!). It’s super delicious, though. Trust me there. I’ve made two batches in two days because my (not-low-carb-eating) boyfriend demolished batch 1 while I was at work!

I originally tried to make these as waffles, and failed miserably. Mostly because I didn’t grease the waffle iron enough, and the eggs did their thing and stuck like crazy. It was a good time, and a great workout to scrub that waffle iron. Anywho…
This recipe works fabulously as a muffin for a side dish at dinner. Super delicious and cheesy! Continue reading Low Carb Cheesy Pepper Jack Muffins
I love waffles, and these are the closest I’ve come to a vegan keto version. They’re pretty dense, but they have that crunchy exterior and with some whipped coconut cream and berries, they’re a delicious Sunday morning treat.
These are gluten free, grain free, vegan, nut free and soy free. So, allergen free (they do have seeds, though!). The ingredients are pretty minimal, and easily found, and while these seem to be a littler higher in carbs, it’s mostly fiber.
