Low Carb & Keto Cookie Dough

Let me paint you word picture of why I needed to make this low carb, keto cookie dough. Back in the days of eating high carb meals, and lots of flour, I really loved eating cookie dough straight out of the bowl, or even the tube. Picture a younger me, cuddled up with a bowl of cookie dough, and a spoon, and a marathon of America’s Next Top Model. So, now that’s it’s been years since I’ve had any sort of gluten-filled cookie dough (or even one with actual sugar), I need a substitute.

This low carb, keto cookie dough substitute was created to fill a cookie dough void, and while this recipe doesn’t taste exactly the same as the high-carb variety…it certainly helps to scratch that itch, all while being low carb, nut free, sugar free, gluten free and keto-friendly. Certainly in the “splurge” category, but totally worth it!

Serve this chilled – it’s so good, words can’t even describe!

Raspberry Protein Low Carb Truffles

Finding a low carb protein bar (that doesn’t contain nuts) has been a bit of a challenge for me, which is to say that I haven’t found one. I’ve scoured the shelves at Whole Foods, but to no avail – there simply doesn’t seem to be a LCHF protein bar that isn’t almond based. So, as you may recall from my previous low carb protein bar posts, I started making my own low carb protein bars! This is another installment in that series, but instead of bar-shaped, I decided to have slightly more fun and make them low carb truffles. Raspberry truffles just sound so delightful! Low Carb Coconut Flour Pizza Crust

So, this lchf (low carb high fat) pizza crust isn’t chewy or crispy – it’s more dense and a little fluffy (does that even make sense?), but it holds together well, stands up to toppings, and doesn’t contain almonds (to which I’m allergic!), like many keto crust almonds. It’s also way less labor intensive, and fewer net carbs than a cauliflower crust (for a similar serving size)! Yay!

Low Carb Vegan Pumpkin Spice Cheesecake

I’m actually really excited about this recipe for a few reasons:

  1. It’s vegan – I’m sure you guys know how hard it is to find vegan keto recipes!
  2. It’s detox city – Brazil nuts supply heaps of selenium, which is an antioxidant and heavy metal detoxifier, as well as a necessary co-factor in thyroid function. So much win.
  3. There are no sweeteners! Wha??? A dessert recipe with no sweeteners? Truth. The first iteration of this recipe had stevia, but honestly tasted kind of strange. So, I added a bit more seasoning and omitted the stevia. This was a good move

Low Carb Snickerdoodle Protein Cookies

Low carb snickerdoodle protein cookies

Cinnamon might be my favorite dessert flavor. Truly, I could eat this stuff morning, noon and night without complaint. Aside from the taste, cinnamon is also excellent for supporting your cardiovascular system and controlling blood sugar. So yeah, it’s pretty great.

Lately, I’ve also been seeking out alternate ways to get in enough protein that don’t involve just eggs or cheese. Eggs and cheese get boring, especially in a low carb or ketogenic diet!

In light of these bits of info, I wanted to update my other  low carb snickerdoodle recipe to have a little more protein content – and to be a little more cost effective. Macadamia nuts are a bit spendy. So, I’m using cashew butter here. Try not to freak out. Yes, it’s a little higher in carbs, but totally worth it if you’re able to eat a little on the higher side of the low-carb spectrum.

Low Carb Strawberry Cheesecake Protein Bars

Low Carb Strawberry Cheesecake Protein Bar - keto-friendly, easy and delicious! After realizing just how delicious my last attempt at a low carb homemade Quest bar turned out, I decided to try making another one of my favorite flavors: Strawberry Cheesecake.

This one is again, 2g net carbs per serving, and contains no almonds which I’m allergic to!). It’s super delicious, though. Trust me there. I’ve made two batches in two days because my (not-low-carb-eating) boyfriend demolished batch 1 while I was at work!

Low Carb Vegan Waffles (the vegan keto breakfast solved!)

Vegan low carb gluten free waffles - vegan keto breakfast!I love waffles, and these are the closest I’ve come to a vegan keto version. They’re pretty dense, but they have that crunchy exterior and with some whipped coconut cream and berries, they’re a delicious Sunday morning treat.

These are gluten free, grain free, vegan, nut free and soy free. So, allergen free (they do have seeds, though!). The ingredients are pretty minimal, and easily found, and while these seem to be a littler higher in carbs, it’s mostly fiber.
