I get bored suuuuuuuuper easily, and so while I’ve really enjoyed my Low Carb Chocolate Peanut Butter Protein Bars, and Low Carb Strawberry Cheesecake Protein Bars (all the keto protein bars!), I’ve been craving variety. Enter coffee. And chocolate. These bars are like crack, and might be my favorite flavor yet, because they combine the two foods I love most (coffee is totally a food), and because they are sugar free, gluten free, filling and won’t make me fat. Win.
Without further ado, here is the recipe!

Ingredients
- 3 scoops (~90g) vanilla whey protein
- 8 tbsp neufchâtel (or cream cheese - whatever floats your boat)
- 4 tbsp coconut butter/manna/creamed coconut concentrate - it's all the same
- 20g (about half a serving) 85% dark chocolate
- 1 tbsp espresso powder
Method
- With a fork, mash together cream cheese and coconut manna.
- Add in vanilla whey proteinr, and espresso powder and combine until completely mixed, and a dough forms. I used my hands here, and kneaded it until everything was completely mixed.
- Grate or crumble chocolate over dough, and keep kneading until it's evenly distributed.
- Press dough mixture into a silicon pullman loaf pan or a regular pullman loaf pan that has been lined with parchment/wax paper and chill for 10-15 minutes. You don't want it hard, just a little chilled.
- Turn out loaf onto a cutting board and slice into 6 equal pieces.
- Wrap in wax paper and store in the fridge.
- Caffeinate while you get your protein!
Hahah, me again! So question: I have in my possession 1 bar of 100% cocoa baking chocolate. How much sweetener should I use for it?
Hi again!! Hm, so I would just use the chocolate as is, but the amount of sweetener to the bars will depend on the type you are using! For liquid stevia, I’d use about 10-15 drops for the recipe (depending on how sweet you like your protein bars), and for a granulated sweetener – about a tablespoon. If you’re using a powdered pure stevia, 1-2 tiny scoops should do it. If the powdered stevia is mixed with maltodextrin, about a half teaspoon should do it!
