Though I do like peanut butter cookies, snickerdoodles and sugar cookies are my favorite. This recipe gets as lose to the real thing as I’ve found without carbs!
Ingredients
- 1 cup unsalted macadamia nuts
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1/4 tsp cinnamon
- 1 medium egg
- 1 tsp vanilla extract
- 1 tsp liquid stevia sweetener, or the equivalent measure of a “cup of sugar” of your sweetener of choice
Method
- Preheat oven to 350 degrees F.
- Grind the macadamia nuts in a blender/food processor until very fine.
- Add the rest of the ingredients and blend until smooth.
- Plop rounded tablespoons of dough onto the tray and flatten. Mine were about 2″ around and I got 11 from this recipe. The dough is a bit soft, so wet hands help.
- Bake for about 10 minutes.
- Cool (if you must), and eat.

Shouldn’t the cinnamon sugar cookies have some sort of fat in them, like butter?
Sorry, I meant to say coconut oil (not butter). Or do the macadamia nuts provide sufficient fat?
Good question! I found that the macadamia nuts provide sufficient fat. I’ll try experimenting with adding coconut oil though to see how it goes! I actually haven’t made these in a while and kind of forget exactly what they’re like!
