They may not be pretty, but these cookies are delicious, and only contain 1 gram of net carbs! I hadn’t had any sort of dessert item (with the exception of some Lily’s Chocolate, which I would highly, highly, recommend), and sort of felt the need for a snack. So, I tossed some good ingredients together, plopped them on a tray, and voila! Cookies.
Peanut Butter Chocolate Chip Low-Carb Cookies
Ingredients
- 1/2 cup Peanut Butter w/Flaxseeds (both Target and Trader Joe’s sells this for $4.99/lb)
- 1 square (14g) unsweetened Baker’s chocolate
- 1 medium egg
- 1 tsp liquid stevia sweetener, or the equivalent measure of a “cup of sugar” of your sweetener of choice
Method
- Preheat oven to 350 degrees F.
- Chop baker’s chocolate into very small pieces.
- Mix all ingredients in a bowl.
- Plop rounded tablespoons of dough onto the tray and flatten. Mine were about 2″ around and I got 12 from this recipe.
- Bake for about 10 minutes.
- Cool (if you must), and eat.
