CM and I just got back from a fantastic vacation in North Carolina for our friends’ wedding and then backpacking through Shenandoah – so fun! Upon returning, though, I’ve realized that fall is in full swing and I needed to add some fall flavors to my tummy. Enter this low carb pumpkin cheddar risotto! I used the frozen riced cauliflower from Trader Joe’s, but you could rice your own in a food processor if you don’t have access to a TJs.
I had pretty high hopes for this low carb risotto, but it really exceeded my expectations! I’m definitely going to make this for Thanksgiving this year, and probably a bunch more times before that. I really love eating cookie dough straight out of the bowl (at least I used to), and while this recipe doesn’t taste exactly the same…it certainly helps to scratch that itch, all while being low carb, nut free, sugar free, gluten free and keto-friendly. Certainly in the “splurge” category, but totally worth it!
Serve this chilled – it’s so good, words can’t even describe!
Cinnamon might be my favorite dessert flavor. Truly, I could eat this stuff morning, noon and night without complaint. Aside from the taste, cinnamon is also excellent for supporting your cardiovascular system and controlling blood sugar. So yeah, it’s pretty great.
Lately, I’ve also been seeking out alternate ways to get in enough protein that don’t involve just eggs or cheese. Eggs and cheese get boring, especially in a low carb or ketogenic diet!
In light of these bits of info, I wanted to update my other low carb snickerdoodle recipe to have a little more protein content – and to be a little more cost effective. Macadamia nuts are a bit spendy. So, I’m using cashew butter here. Try not to freak out. Yes, it’s a little higher in carbs, but totally worth it if you’re able to eat a little on the higher side of the low-carb spectrum.

They’re crazy easy and remind me of the ones my Finnish stepmother made for my brother and I when we were children. This is a splurge food. I’m just going to come right out and say it. Chocolate Peanut Butter Pie (low carb or otherwise) is straight up dessert food, for those special occasions when – gosh darn it – you deserve a treat. Yes, it’s a little higher in net carbs (5.5g), but if you can tolerate more carbs in a day, or if you just want something that is rich and smooth and also pretty high in protein, this is a dessert for you.

After realizing just how delicious my last attempt at a low carb homemade Quest bar turned out, I decided to try making another one of my favorite flavors: Strawberry Cheesecake.
This one is again, 2g net carbs per serving, and contains no almonds which I’m allergic to!). It’s super delicious, though. Trust me there. I’ve made two batches in two days because my (not-low-carb-eating) boyfriend demolished batch 1 while I was at work!
