Low carb snickerdoodle protein cookies

Cinnamon might be my favorite dessert flavor. Truly, I could eat this stuff morning, noon and night without complaint. Aside from the taste, cinnamon is also excellent for supporting your cardiovascular system and controlling blood sugar. So yeah, it’s pretty great.

Lately, I’ve also been seeking out alternate ways to get in enough protein that don’t involve just eggs or cheese. Eggs and cheese get boring, especially in a low carb or ketogenic diet!

In light of these bits of info, I wanted to update my other  low carb snickerdoodle recipe to have a little more protein content – and to be a little more cost effective. Macadamia nuts are a bit spendy. So, I’m using cashew butter here. Try not to freak out. Yes, it’s a little higher in carbs, but totally worth it if you’re able to eat a little on the higher side of the low-carb spectrum.

3 Ingredient Low Carb Peanut Butter Cookies

Shark week of all kinds is happening right now, and in this particular month – I want to eat EVERYTHING. I’ve also started eating carbier foods (seriously, yogurt  was the gateway), and am now more or less off (okay, more) the low carb bandwagon. I do not feel great as a result. So, we’re back to full-time low carb,  and I thought I’d make myself cookies as a result.

Low Carb Paleo Shortbread

AIP paleo shortbread cookies - vegan, grain free, low carb, delicious and super simple!

I promise I’ll start posting non-dessert recipes again soon, but these are just so good I can’t help myself! They’re made of coconut butter, coconut flour and a touch of maple syrup – seriously delicious, but not without nutritional benefit! And holy crap, it’s low carb, too (1 net carb per cookie)!

I know, there’s maple syrup – but don’t freak out! It’s just enough to help hold these together and give some flavor without adding any real amount of carbs. If you want to sub for a sugar free syrup, though, be my guest!

If you want a mineral-rich cookie with mild antibiotic properties (from both the coconut butter and the maple!) that is also rich and buttery and tastes like all that is amazing, then this is the cookie for you. Continue reading Low Carb Paleo Shortbread

Parmesan Pepper Cheese Crisps

I love chips, and crunchy salty things, but crunchy, salty chips tend to have carbs. Lots of them.

So, to solve my dilemma, I thought back to an old friend of mine: parmesan tuiles. Tuile means ’tile’ in French, but the culinary understanding of the word is a crispy wafer made of dough or cheese. We’re obviously going with the latter here.

Traditionally, a tuile is used as a garnish on another dish (I feel like I mostly saw these on cooking shows in the early 2000s), but we’ll be using it as the main attraction.

Coconut Chocolate Chip Cookie Bars

Grain free Low Carb Chocolate Chip Cookie Bars 

Well, I’m finally back. Where did I go for most of January, all of February and most of March? Mostly the doctor! 

Apparently, I’m pretty allergic to carageenan (a food additive used as a thickener in non-dairy products, and also toothpaste and a few other things). Super random. I know. 

Anyway, I developed these gives that turned into eczema and eventually had an anaphylactic reaction and was put on crazy high doses of prednisone. 

Long story short, I finally figured out it was the carageenan in the new brand of almond milk I was buying, and eventually things cleared up…after two months of constant discomfort and pain. So, I’ll happily avoid that ingredient from now on! If you’re interested in reading more about carageenan (who wouldn’t be?)
