Eggnog Latte Low Carb Breakfast Bars

I’m always looking for new low carb or keto vegetarian breakfast options. Yes, pancakes, and omelettes and all other iterations of egg are great, but it gets kind of boring. And I know you can eat dinner food for breakfast, but sometimes I want something that will go nicely with a cup of coffee. I want something that feels like cafe food. In that spirit, this morning, I had the idea to make eggnog latte flavored low carb breakfast bars.

I’ve been crushing on this Eggnog Protein Powder from Legion Athletics, and love any excuse to put it to good use. Plus, coffee. Coffee, people. These puppies have a  totally reasonable amount of protein, minimal carbs, and make a perfect breakfast, snack or even dessert.

Notes on making Eggnog Latte Low Carb Breakfast Bars:

  • I used this Eggnog Protein Powder from Legion Athletics, but if you could also just use vanilla whey protein powder with a pinch of nutmeg.
  • I used Neufchatel cheese, which is basically lower fat cream cheese. Feel free to sub in cream cheese, or mascarpone.
  • Using a granulated sweetener, like Swerve, is important for texture. Using a powdered sweetener will  not give the same chewiness, and could yield bars that are too dense or hard.
  • Either brewed coffee or espresso (or espresso powder) will work for this. Espresso/espresso powder will yield the most coffee-like results.
  • If your bars turn out too tough, then they need just a smidge less time in the oven. My first batch of eggnog latte low carb breakfast bars sat in the oven for 30 minutes, and was a bit…dry and unpleasant. The second batch at 22 minutes definitely turned out much better!

Eggnog Latte Low Carb Breakfast Bars

Yield: 8 breakfast bars

Serving Size: 1 breakfast bar

Calories per serving: 98

Fat per serving: 7.3g

Carbs per serving: 1.3g

Protein per serving: 7g

Eggnog Latte Low Carb Breakfast Bars

Ingredients

  • 4 ounces cream cheese (or Neufchatel, or mascarpone)
  • 3 tbsp butter, softened
  • 1/2 cup coffee
  • 1/4 cup Swerve, or other granulated sweetener
  • 2 scoops (~60g) eggnog flavored protein powder

Method

  1. Preheat oven to 350F.
  2. Cream together butter, cream cheese and Swerve.
  3. Slowly pour in coffee, and mix until completely blended.
  4. Stir in protein powder.
  5. Sprinkle with cinnamon, if desired.
  6. Pour into a silicon loaf pan (or 8x8 pan), and bake for 20-22 minutes, or until the top has set.
