I’ve been experimenting with low carb pizza crust recipes for a while now. Sometimes, I get kind of close…like, it’s good tasting and the texture is okay, but nothing all that fabulous. I’m not really excited about cauliflower crusts, because honestly – I like a simple recipe with minimal steps. The remainder of low carb pizza crust recipes seem to involve almond flour.

Cranberry Low Carb Scones

So, I enjoy reading Food & Wine magazine, because I like food, and in their November issue, there is a tiny feature on biscuits. Included is a recipe for scones. I’ve been staring at this recipe for a while now, thinking, “I’d love a scone – a scone sounds delicious.” It does sound delicious, right? So, with that in spirit, I decided to go ahead and make some low carb scones. The cranberry part came into play during the second test batch (these guys took some tinkering), as I was thinking about smother these in cranberry sauce and butter. Tips for Baking With Swerve

Okay, so I’m finally joining the world and trying some low carb baking with Swerve. Why have I held off for so long? I’ve tried other alternative sweeteners (I still love my stevia), so I’m certainly no stranger to sugar substitutes. Honestly, I think it was the price that kept me from diving in here. Yup, I’m not going to sugar coat it (eh?), $12/lb (what the grocery store charged) is not cheap. What the hay is “PB & C?” I hear you asking. Great question! Peanut Butter & Chocolate. I figure I turn to this combination so much that I might as well abbreviate it to make my life that much easier. Now that we’ve got that settled, on to the issue of low carb thumbprint cookies.

You remember thumbprint cookies from your childhood, I’m sure. And of course, there’s the ever memorable version that’s peanut butter flavored with a Hershey’s kiss in the middle – heaven, am I right? Well, having peanut butter on hand, but no kisses to speak of (woe!), I decided to invert that classic and make a low carb thumbprint cookie with a chocolate base, and peanut butter filling. On gratitude and being comfortable in your body

Instead of a post about low carb cookies, or a rant about how I wish WoW would just reset back to vanilla,* I’m going talk a little bit about being comfortable. It’s taken me years to be comfortable in my own body, and even now, it’s not perfect. Part of the discomfort I felt for over two decades was due to undiagnosed food allergies and autoimmune conditions. Low Carb Cranberry Pumpkin Pies

Pocket pies! These things are so cute! Aside from that, these low carb cranberry pumpkin pocket pies are absolutely freaking amazing tasting. Seriously, delicious doesn’t begin to cover it. These are definitely making it to my Thanksgiving table. No question. I’ll probably also make them at least twice more in between now and then. The problem is I’m already telling myself that they’re fruits and veggies and low carb, so what’s the problem??

Nothing. There is no problem whatsoever. I had to hide the remaining ones from myself this morning so that I wouldn’t eat them all before CM returns from work.

I used this adorable little pocket pie mold that I was given as a gift a while ago from an old roommate, but you can easily get away without one. Either way, I’m so excited to add these to my Thanksgiving menu!
