I’m a little too excited about fall, and pumpkin, and all things that really basic girls like. I have no shame. I also really love protein bars, and when I saw that Quest was making a pumpkin pie bar, it inspired me to make some low carb pumpkin pie protein bars that I could eat, too!
The thing about these protein bars, is that they need to be chilled in the fridge for a bit when you make and store them. Yes, it’s a bit of a pain, but the taste is totally worth it. These bars are low carb, keto-friendly, sugar free, nut-free, and taste like a pumpkin pie that is also nourishing you. So good!
Seriously, my next goal is to make some low carb pumpkin pie that tastes good, but these sugar free pumpkin pie bars will have to do for now!
Ingredients
- 1/2 cup cream cheese
- 1/2 cup coconut butter
- 4 scoops (~120g) vanilla whey protein powder
- 2 tbsp canned pumpkin
- 2 tsp cinnamon or pumpkin pie spice
Method
- In a bowl, mix together cream cheese, coconut butter, pumpkin, and spices until totally combined.
- Add in whey protein, and stir until a dough forms. Knead until the whey is totally mixed in.
- Press into a loaf pan and chill for about 30 minutes before cutting into 8 equal pieces.
- Store in fridge. Stuff in face.
